I had the honor and pleasure to design and contribute some of my own photography for a passion project that has been in the works for WEEKS alongside 2 other healthy lifestyle coaches, Theresa Carlson and Melanie Hargrove.

We have been working hard behind the scenes for months on an ebook JUST FOR YOU!! This e-cookbook is packed with easy combos of healthy bowls, sheet pan meals, to delicious shakes and snacks.

šŸ’ Finding delicious and simple meals isn't as simple as it seems. We definitely get it! Meal prep can seem daunting. Especially in our already busy lives..

In then meantime, I thought Iā€™d share a sneak peek into one of my family favorites! These tacos are amazing and well every week we spice it up on Taco Tuesday and this one is a HIT!

Green Apple Shrimp Tacos

Prep Time: 30 mins | Total Time: 45 mins | Serves: 4

Ingredients

1 Ā½ tablespoons olive oil, divided

4 teaspoons fresh lime juice, divided

Ā¼ teaspoon ground cumin

Ā¼ teaspoon hot smoked paprika

Ā¼ teaspoon ground red pepper

1 pound medium shrimp, peeled and deveined

1/3 cup sliced green onions

Ā¼ teaspoon salt, divided Ā½ teaspoon grated lime rind

1 Granny Smith apple, thinly sliced

1 minced seeded jalapeno pepper

8 (6-inch) corn tortillas 1 ounce crumbled queso fresco

Instructions

Combine 1 tablespoon olive oil, 2 teaspoons lime juice, cumin, paprika, and red pepper in a small bowl. Combine shrimp and spice mixture in a zip-top plastic bag, and seal. Let stand 15 minutes.
Combine 1 Ā½ teaspoons oil, 2 teaspoons juice, onions, ā…› teaspoon salt, rind, apple, and jalapeƱo; toss.
Remove shrimp from bag; discard marinade. Heat a grill pan over medium-high heat. Sprinkle shrimp with ā…› teaspoon salt. Arrange half of shrimp in pan; grill 2 minutes on each side or until done. Remove from pan; keep warm. Repeat procedure with remaining shrimp. Toast the tortillas in grill pan, if desired. Place 2 tortillas on each of 4 plates, and divide shrimp evenly among tortillas. Divide salsa evenly among tacos, and top with queso fresco.
