CUCUMBER AVOCADO SALAD

INGREDIENTS

2 large English cucumber, halved and sliced into .-inch thick slices . red onion thinly sliced

2 avocados peeled, pitted and diced

ó cup cilantro chopped

2 tbsp fresh mint, chopped

1/4 cup black sliced olives

2 eggs soft boiled

1 sliced thai chili pepper

Salt and pepper to taste

1/4 cup peanuts

DRESSING

3 tbsp extra virgin olive oil

2 tbsp rice vinegar

1 clove garlic

juice of 1 lemon

salt to taste

INSTRUCTIONS

1. Mix together, cucumbers, onion, olives, avocados, and chopped mint and cilantro in a large salad bowl.

2. Drizzle with the olive oil and lemon juice (or lime juice), and season with salt and pepper. Toss gently to mix all of the flavours through.

HELPFUL HINT

A great way to increase protein in this salad is using Rotisserie chicken from your local favorite chicken place or supermarket. You could ALSO make this with any left over roast chicken you have lying around somewhere, OR cook some up IF you really REALLY have to. Either way, this salad is so versatile, make it however you please.
